Big Cheese 13-Year Aged White Cheddar is an exceptionally mature cheddar. At 13 years of aging, it has developed characteristics that are quite different from the mild or medium cheddars most people are familiar with.
Appearance
* Natural ivory to pale cream color (no orange coloring).
* Often slightly crumbly rather than smooth.
* May contain visible white specks called calcium lactate crystals, which are a sign of long aging and are prized by cheese enthusiasts.
Texture
* Firm and dense.
* Breaks into chunks instead of slicing cleanly.
* Dryer than younger cheddars.
* The crystals create tiny crunchy bursts when you bite into the cheese.
Flavor
The flavor is extremely concentrated and complex:

I ordered a box to be delivered as a thank you gift to dear friends in NYC. Unfortunately, I gave the wrong shipping address and wrote to Jeremy who solved the issue immediately. I also made the mistake of ordering the box to be delivered during an unprecedented heat wave. Some of the cheeses couldn’t survive the temperatures and had to be reordered. The company cheerfully facilitated the exchange and we had happy campers all around. We were delighted by the experience and will order from The Big Cheese again soon!
Might be the best cheese spread I’ve ever had. I’ve found chicken and biscuit crackers and this are to die for and a nightly snack.
It’s was good, I just wasn’t really into it.
We live in CO and order this cheese spread as there is nothing better or compares to The Big Cheese. The best taste and variety you can’t go wrong with. Highly recommend all their products!
